For me there is no better (and unhealthy) food on this planet, this food is butter. If I had to choose my last meal it would be a loaf of fresh bread and a lot of butter. I am one of those people who used 3 times the amount of butter to the slice of bread. I swear half of the time I consume food just because of the butter. I hate mayonnaise so growing up my mom had to find and alternative to get me to eat my veggies and this was butter (and lemon).
Julia Childs inspired a generation of cooks with her whacky tactics and love of cooking. She so often commented on her favorite ingredient, butter. “With enough butter, anything is good” – Julia Child
So in this blog I have decided to share some of my favorite recipes that involve butter!
Lemon Butter Sauce for Artichokes
½ cup butter
1 lemon squeezed (1 ½ lemon for extra tart)
Dash White Pepper
½ tsp parsley flakes
Put all ingredients in microwave safe bowl. Microwave until butter is melted, and then mix well. Enjoy by dipping your artichoke leaves and heart in the lemon butter.
Lemon Butter Green Beans
2- 3 tbsp butter
1 lemon squeezed
3 cups of green beans
Begin by boiling or steaming the green beans until al dente (slightly crisp). At the same time begin to brown butter in a skillet. Drain the beans and put in skillet with butter, and squeeze lemon over the top. Sautee until green beans are slightly browned. Enjoy!
2 filet mignon
2 pieces pepper bacon
course ground pepper
3 tbsp butter
Pre – Heat oven to 450°F. In oven safe skillet melt butter until sizzling. In the mean time wrap 1 piece of bacon around each filet, securing with a toothpick. Add the bacon wrapped filet into the sizzling butter. Sear one side for about 1 minute, then flip over and sear again for 1 minute. Place skillet in the oven and cook until medium rare, about 3 minutes. Remove and let rest for 3-4 minutes. Enjoy!
Buttered Grilled Cheese
Sourdough Bread (2 slices)
Sliced Sharp Cheddar Cheese (2-3 slices)
Garlic powder or garlic salt
Spread one side of each slice of bread with butter. On the butter sprinkle the bread with garlic powder or garlic salt (light coating). Place one slice of bread butter side down in skilled on medium heat, place slices of cheese to cover bread, add second slice of bread on top (butter side facing up). Cook until cheese is melted and bread is browned. Enjoy!
Cornbread and Honey Butter
Marie Calendars Cornbread mix
½ cup butter (softened)
2 tbsp honey (rough estimate)
Cook cornbread according to package instructions, (seriously Marie Calendars is the best and easiest cornbread out there). Soften the butter (not melted) and add in honey. Mix until smooth and consistent. Spread on warm cornbread and Enjoy!!
